Whichever your corrector illuminates well. Sensor size is usually constrained by the optics rather than the budget, so tell us your telescope and corrector first.

Cooled or uncooled?

Cooled for deep-sky imaging, where a stable regulated temperature makes calibration frames repeatable. Uncooled is entirely appropriate for planetary and guiding, where exposures are very short.
