Are large binoculars better than a telescope for deep sky?

Different, not better. Two-eyed viewing improves detected contrast and is far more comfortable for long sessions, and wide true fields suit large objects. A telescope still wins on magnification and small targets.

Do I need a parallelogram mount?

For binoculars above roughly 70 mm, yes. It lets you observe near zenith seated and allows another person to look without readjusting, which is the difference between an instrument you use and one you store.

45 or 90 degree eyepiece angle?

90 degrees for astronomy, especially anything high in the sky. 45 degrees is more comfortable for terrestrial and horizon viewing and is easier to aim intuitively.

How do UFF eyepieces compare to wider designs?

UFF gives a flat, well-corrected 65 degree field with generous eye relief and modest weight. The XWA series trades weight and cost for a much more immersive field. Glasses wearers usually prefer UFF.
